When the weather gets chilly and the winds start to blow-it’s soup season. I love to fix and share soup. This past week I made one of my favorites– a vegetable beef soup. I might make it once a month in the winter but it takes about 6 hours to complete so I have to plan it on a day that I am mostly home. It makes 15 servings and does not freeze well (the potatoes and carrots get mussy when frozen). My answer to that is that I eat it several times that week and give the rest away. My friends love it when I make this soup. Earlier in the week I had also made chicken noodle soup. However, that does freeze and only 2 friends got servings of that. My sister and her husband are coming up the day after Thanksgiving- I think I’ll make chili.
